Coleslaw

I love coleslaw! I should make it more often. I got a recipe from allrecipes.com (original recipe called "Restaurant-Style Coleslaw" and given 4 1/2 stars), but I altered some things. It's great! Here's how I made it:

2 (16 oz.) bags coleslaw mix (or, thinly slice cabbage and shred carrots to equal 12-13 cups cabbage/carrot mix)
4 Tbsp. minced onion (I finely diced fresh yellow onion)
1/3 cup sugar
3/4 tsp. salt
1/4 tsp. black pepper
1 tsp. celery seed
3/4 cup mayonnaise
3/4 cup buttermilk
2 1/2 Tbsp. white vinegar
4 Tbsp. lemon juice (I used 2 small, fresh lemons)

Combine coleslaw and onion in a large mixing bowl. Combine remaining ingredients in a smaller bowl and beat until smooth. Pour dressing over coleslaw mixture and toss well. Chill for at least one hour before serving.

Spinach Grape Salad

This is a recipe we first tried when Whitney Baker made it while we were in Idaho this past summer. My kids loved it and say it's pretty much the only way they'll eat fresh spinach.

SALAD

1 Pkg fresh washed spinach
1 Head of Romaine lettuce washed and chopped up (or bag)
1/2 C. Cottage Cheese (I use large curd and drain it through a slotted spoon before tossing in salad)
3/4 C. to 1 C. grated cheese
5 strips of Bacon, cooked & crumbled (or bacon bits)
2 cups Red Grapes (I usually slice them in half)
1/2 diced Red Onion
optional additions: hard boiled eggs, mushrooms & sunflower seeds

DRESSING

1 TO 1 1/2 tsp. Poppy Seeds
1 C. Olive Oil
1/2 to 3/4 C. white vinegar or red wine vinegar (I use red wine vinegar)
1/2 to 3/4 C. Sugar
1/2 to 2 Tbsp of chopped Red Onion
1 to 1 1/2 tsp. Salt
1/2 to 3/4 tsp. dry Mustard

Blend together in blender. Pour some of the dressing over diced red onions and mushrooms to marinate for 2 hours, if desired.
Pour over salad and enjoy.

Cobb Salad

Every time I make this, I wonder why I don't do so more often. My children even loved it when I made it a couple weeks ago.

Romaine lettuce, washed and chopped
Tomato, diced
Carrot, grated
Cucumber, sliced
Avocado, diced
Bacon, cooked and crumbled
Turkey, chopped
Cheddar cheese, grated
Hard boiled eggs (1 per person)
Croutons
Ranch or Blue Cheese Dressing

Toss first four ingredients together. Arrange remaining ingredients in bowls or on a plate. People can assemble their salad with what they like on it, and the leftover cheese, avocado, and croutons won't go bad in any leftover salad. Other optional ingredients: thin slices red onion, corn, celery, etc.
