Four Cheese Penne Bake!!


Four Cheese Penne Bake
1 pound penne

Filling:
1 1/2 cup cottage cheese
1 cup part skim ricotta
1 cup mozzarella
1/4 cup grated parmesan

Sauce:
2 tablespoons olive oil
1 medium onion, chopped
2 teaspoons minced garlic
1 can diced tomatoes (15 oz.)
1 can tomato sauce (15 oz.)
1 teaspoon italian seasoning
Salt and pepper to taste

Preheat oven to 400 degrees. Boil the pasta until al dente. Combine the filling in a large bowl. After the pasta is done, drain and add to filling.

In a pan heat the oil, add the onion and garlic. Cook for 2-3 minutes, then add, tomatoes, sauce, seasoning, salt and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes. Add sauce to pasta and filling. Transfer to a 9x13 cooking dish and top with additional mozzarella and parmesan cheese. Bake until heated through and cheese is melted, 20-25 minutes.
