Double Chocolate Banana Muffins


I made a new muffin recipe this morning. It's a winner! Of course, I healthified the original recipe along the way--I added whole wheat flour and reduced the sugar and oil. But, I didn't skimp on the chocolate chips. That would be taking healthification a bit too far, don't you think?

Here's the recipe, as I made it...

In a medium bowl, combine:
1 cup whole wheat flour
1/2 cup white flour
1/3 cup coconut sugar
1/3 cup organic white sugar (can just use 2/3 cup of white sugar and omit the coconut sugar if you don't have any)
1/4 cup cocoa (I used Dutch-processed)
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder

In a small bowl, add the following ingredients and mix well. 
1 1/3 cup mashed bananas (about 3 bananas)
1/4 cup oil
1/4 cup applesauce (or omit and use 1/2 cup oil)
1 egg

Add banana mixture to dry ingredients and mix just till combined. 

Stir in 1 cup mini chocolate chips. 

Divide among 12 muffin cups and bake at 350 for 15-20 min. until toothpick inserted in center of a muffin comes out clean. (Mine took 20 min., but I checked them after 15). Enjoy!

Chocolate Oatmeal Chocolate Chip Cookies


These cookies are delicious! Your whole family will love them as much as mine, I just know it!

1 C. butter
1 C. brown sugar
1/2 C. white sugar
1 tsp. baking powder
1/2 tsp. baking soda
3 ounces unsweetened chocolate, melted and cooled
(Or I always substitute 9 Tb. cocoa powder & 3 Tb. oil, coconut recommended)
1 egg
1 tsp. vanilla
1 1/4 C flour (reduce to one cup if using cocoa alteration)
1 1/2 C rolled oats, quick-cooking recommended
1 C. chocolate chips

Beat butter on medium to high speed for 30 seconds. Add the sugar, baking powder, and baking soda, mix until combined. Scrape sides of bowl occasionally. Mix in the melted chocolate or add the cocoa powder and oil. Add the egg and vanilla, mix till combined. Add in the flour. Then add in the rolled oats & chocolate chips.
Drop dough by rounded teaspoons onto ungreased cookie sheet. Bake in a 375 degree oven for 8-10 minutes, or till edges are firm. Transfer cookies to wire rack and cool. Devour!!!
